Monte Carlos

First of all I would like to say thank you if you are reading this for taking the time to read my Instagram post and the deciding to check it out.. Anyway back to business! The recipe is down below and it has been tested by all the members in my family and they all gave it a big thumbs up, and so will you!

recipe-

180g of butter

1 tsp of vanilla

1/2 brown sugar

1 egg

1 1/2 self raising flour

3/4 plain flour

1/4 tsp of bicarbonate of soda

2/3 coconut

1/3 strawberry jam, approximately

vienna cream-

60g of butter

1/2 tsp of vanilla

3/4 icing sugar

2 tsp of milk

method-

beat butter, vanilla and sugar in a small bowl until just combined with electric mixer until just combined

add egg until just combined

stir in sifted flours, soda and coconut

roll two level tsp of mixture into ovals, place on try lined with baking paper about 5cm apart

flatten using the back of a fork

bake in an oven on 180 degrees celsius for about 7 minutes

allow to cool on tray

vienna cream-

beat butter, vanilla and icing sugar in a small bowl with electric mixer until fluffy

beat in milk

past half of the cookies with jam and the other half with vienna cream

sandwich them together and enjoy!
