soft and chewy muesli bar

this is a thermomix recipe :)

if you were planning to send these to a nut-free school you can always add a little more dried fruit and seeds. also a nut free sub instead of peanutbutter can be tahini

recipe-

1 and 2/3 cup of cornflakes

1/2 cup Kiowa

1/3 cup plain flour

1/2 cup coconut

pinch of sea salt

sprinkle of cinnamon

1 teaspoon vanilla

1/2 cup melted coconut oil

1/2 cup peanut butter

1/2 cup honey

1 cup of mixed nuts

1/2 dried fruit

method-

preheat the oven to 170 degrees celsius (160 if using fan forced).

line a rectangular slice tin with baking paper

leave some paper hanging over the edge so that the bars will be easier to remove from the pan

melt the coconut oil, peanut butter and honey on 90 degrees, reverse speed 2 for 2-3 minutes

add in the salt, cinnamon and vanilla and mix on 90 degrees, reverse speed 2 for 1 minute

add the cornflakes, flour, coconut, nuts and dried fruit and mix on reverse speed 4 for 20 seconds

add the kiowa and gently mix together on reverse speed 2 for 20 seconds (you may need to use the spatula to make sure it is all mixed together.

press the mixture firmly and evenly into the tin

bake for about 30 minutes or until the edges are golden brown.

*If you like, you can drizzle some melted chocolate over the slice once it’s out of the oven.

cool completely before removing from the pan and cutting into bars.
