Melting Moments

Oh my gosh!! WOW these are amazing!! The shortbread part of the biscuit is so buttery and delicious. It really compliments the 'cream' in the middle. These are must try for you Sunday baking. Although they do take a little extra time to make they are so worth it. This recipe uses pretty simple ingredients that I'm sure you would have off hand in your pantry. I recommend doing a double batch because these only made nine :( and if you're going to the trouble of making them why not? Any how this is the recipe give it a go!

recipe-

125g of butter

1 tsp of vanilla essence or paste

2 tbsp of icing sugar

3/4 plain flour

1/4 corn flour

filling-

30g of butter

1/2 tsp of vanilla essence or paste

1/2 icing sugar

1 tsp of milk, approximately

method-

1. beat butter, vanilla and sifted icing sugar in a bowl with electric mixer until light and fluffy

2. stir in sifted flours

3. roll into small balls and push down on them with a fork

4. bake in over at 180 degrees Celsius for 10 min (keep a close eye on them)

5. let them cool on the tray, don't try and pick the up until cool (they will break- I worked this out the hard way)

6. join cool biscuits with filling

filling-

1. beat butter, essence and sifted icing sugar in a small bowl until light and fluffy

2. beat in enought milk to make it spreadable
