serves two.
Recipe-
200g of rice noodles
2 tbsps of oil
1 chicken breast, chopped into small thin pieces
1 tsp of chicken stock
2 eggs
3 spring onions, thinly sliced
1/3 of a red onion, chopped
1/2 a capcicum, chopped
(sauce)
3 tbsps of soy sauce
1 tbsp of oil
1 tbsp of fish sauce
1 tsp-tbsp of sambal oelek (or chilli sauce of choice)
2 tbsps of lemon juice
2 tbsps of brown sugar
Method-
1. Put rice noodles in a large bowl and fill with boiling water. Let noodle soak for 5-7 minutes, drain and rinse
2. Heat oil in a large pan
3. Crack eggs in pan and using a spatula scramble until cooked then set aside
4. Place chicken in the pan with chicken stock and cook until light brown
5. In a small bowl whisk all sauce ingredients together
6. Add all ingredients back in the pan and allow veggies to cook through
7. Serve with rice!
